High-Protein Fluffy Egg White Bites Recipe (6 Ingredients, 30 Minutes) by 30Seconds Food

To make this high-protein recipe – and get all the health benefits of protein – you will need the following six wholesome ingredients: liquid egg whites, cottage cheese or Greek yogurt, cheddar cheese, cannellini beans, dried Italian seasoning and garlic powder. Check out the list of optional add-ins if you want to add even more goodness to your egg bites.
Serve these easy egg cups for breakfast, brunch, lunch or dinner (add a salad on the side) or as a quick snack during the day. They're even a delicious high-protein after-workout option.

Ingredients
- 2 cups liquid egg whites
- 1 cup cottage cheese or plain Greek yogurt
- 1/2 cup shredded cheddar cheese
- 1 cup cannellini beans, rinsed and drained
- 2 teaspoons dried Italian seasoning
- 1/2 teaspoon garlic powder
Optional Add-ins
- 1/4 cup sundried tomatoes, finely chopped
- cooked crumbled bacon (Rachel likes nitrite-free bacon)
- cooked crumbled turkey sausage
- handful chopped baby spinach
- diced mushrooms
- green onions or herbs
- diced peppers
Here's how to make it:
- In a blender or food processor, add the egg whites, cottage cheese, cheddar, beans and seasonings. Blend just until combined. Season with salt and black pepper, to taste.
- Divide your egg mixture equally among 12 lightly greased silicone muffin cups, filling each about 2/3 full. Sprinkle the tops with any optional add-ins, if using.
- Carefully prepare a steam bath in your oven by placing a large, rimmed baking sheet on the bottom rack of your oven. Boil water on the stove then carefully pour the boiling water into the baking sheet filling it just halfway. Carefully place your egg bites on a rack right above the steam bath.
- Bake in a preheated 350-degree F oven for 18 to 22 minutes, or just until set. Carefully remove your egg bites from the oven once set, but allow the baking sheet to cool completely before removing it from the oven as it's full of very hot water. The egg bites stay good in an airtight container in your refrigerator for up to five days.
