The best thing I ate all week is this creamy high-protein taco skillet casserole recipe with ground chicken. It disappeared so quickly! Knowing that my family loves taco flavor, I had a feeling they'd like this recipe. But I was surprised by how much they loved it!
If you're looking for an easy meal with a flavor many families can agree on, look no further than tacos. That's what I was thinking when I decided to make a taco casserole for our most recent family dinner. Little did I know this cheesy taco casserole would make it to the top of their favorites list!
This flavorful skillet casserole recipe is packed with protein, thanks to the ground chicken, cheese and Greek yogurt. Check out the health benefits of Greek yogurt. Here's the list of gluten-free ingredients for this one-pan recipe: extra virgin olive oil, onion, orange bell pepper, ground chicken, fresh spinach, low-fat plain Greek yogurt, shredded mozzarella cheese, diced tomatoes, taco seasoning and shredded cheddar cheese. You combine the savory ingredients in the skillet on the stovetop then bake until it's a bubbly golden brown.
I served this nourishing meal for dinner over rice, but it also would be delicious rolled into a tortilla or even spooned into taco shells and topped with salsa. It's one easy chicken dinner that will be on repeat in our house!

Ingredients
- 1 1/2 tablespoons extra virgin olive oil
- 1 cup onion, diced
- 1 cup orange bell pepper, diced
- 1 pound ground chicken
- 4 ounces fresh baby spinach
- 1 cup low-fat plain Greek yogurt
- 1 cup shredded mozzarella cheese
- 14.5 ounces (1 can) diced tomatoes, drained
- 1 ounce (1 packet) taco seasoning
- 1 cup shredded cheddar cheese
Optional Ingredients
- crushed red pepper flakes, to taste
- fresh parsley or cilantro, for garnish
- toppings such as sour cream, salsa, guacamole, tortilla chips, etc.
Here's how to make it:
- In a cast iron (or ovenproof) skillet over medium heat, add the olive oil, onions and peppers. Stir to combine. Add the ground chicken. Break it up and sauté with the vegetables until it's browned and cooked through. (I used an orange bell pepper, but you can use any color bell pepper you prefer. You also could use ground turkey or ground beef instead of chicken.) Add the spinach and sauté until wilted, about 2 minutes. Remove from heat. Drain any excess liquid.
- In a large mixing bowl, add the Greek yogurt, mozzarella cheese, diced tomatoes and taco seasoning. Season with sea salt and black pepper, to taste, if desired. Stir to combine. (I used a taco seasoning packet, but you can make your own taco seasoning, if preferred. If using crushed red pepper flakes, add them now.)
- Add the mixture to the skillet and stir until thoroughly combined.
- Spread the shredded cheddar cheese over the top of the skillet mixture.
- Bake at 425 degrees F for 15 to 20 minutes, or until cooked through and a bubbling golden brown.
- Allow to cool for a few minutes before serving. Garnish with fresh parsley or cilantro, if desired.
- Serve with your favorite taco toppings, such as salsa, guacamole or sour cream. We crushed some tortilla chips and sprinkled them on top for some crunch. Store leftovers in an airtight container in the refrigerator and reheat in the microwave.
