The goat cheese mixture is blended, spooned into pre-made mini phyllo shells then popped into the oven. Pre-make the cheese mixture early in the day then bake them as your guests arrive for a toasty, creamy appetizer that will impress your family and friends. (And there's no need to share that they come together in just 30 minutes!)
To make this low-sodium baked appetizer recipe, you will need just seven simple ingredients. Here is your short shopping list: pre-made phyllo shells (from the freezer department of your grocery store), goat cheese (you can use cream cheese instead), Greek yogurt (check out the health benefits of Greek yogurt), Pecorino Romano or Parmesan cheese, pesto (pesto has some surprising health benefits), sundried tomatoes and pine nuts.
Serve these Mediterranean-inspired baked goat cheese bites as an appetizer or snack when friends and family gather (or even when it's just the two of you).

Ingredients
- 15 mini phyllo shells
- 2 ounces goat cheese or cream cheese, softened
- 1/3 cup plain Greek yogurt (I prefer 2 percent or whole milk)
- 3 tablespoons shredded Pecorino Romano or Parmesan cheese
- 2 tablespoons pesto
- 2 tablespoons chopped sundried tomatoes in oil, drained and blotted dry
- pine nuts
Recipe Notes
- If you want to make this recipe ahead of time, prepare the cheese mixture and place in the fridge. Remove about 15 to 30 minutes before desired baking time. Resume making from step 3.
- Use any store-bought or homemade pesto. (Macadamia pesto is one of my favorites, but any jarred pesto will do.)
- Go easy on the salt and pepper. You can always add a bit more later, if desired.
Here's how to make it:
- In a medium mixing bowl, add all the ingredients except the pine nuts. Stir to blend.
- Fill pastry shells with the cheese mixture.
- Sprinkle the tops with pine nuts. Bake in a preheated 325-degree F oven for about 12 minutes, or until the mixture is warm and pine nuts are nice and brown. Serve warm and enjoy!
