This easy baked chicken recipe has only seven simple gluten-free ingredients, but they come together to make some serious magic. Here's what you need to make this flavorful chicken dinner tonight: chicken breast or thighs, mayonnaise, shredded Parmesan cheese, smoked paprika (check out the health benefits of paprika), garlic powder, onion powder and fresh parsley (check out the health benefits of parsley).
You mix together the topping ingredients, spread the tasty topping over the chicken in a baking dish then bake it for about 30 minutes. Sprinkle fresh parsley on top for added flavor and color. Serve this easy chicken recipe with your favorite side dishes or your preferred vegetables for a delicious dinner everyone will devour. I served it with rice and a Greek salad and it was really, really good!

Ingredients
- 2 pounds boneless, skinless chicken thighs or chicken breasts (I used a combination)
- 1 cup light mayonnaise
- 1 cup shredded Parmesan cheese
- 3/4 teaspoon smoked paprika
- 3/4 teaspoon garlic powder
- 3/4 teaspoon onion powder
- 2 tablespoons diced fresh parsley (divided)
Recipe Notes
- You can use chicken breast or thighs or both (which is what I used).
- You can use your mayonnaise of choice (I used Hellman's Light Mayonnaise).
- Store leftovers in an airtight container in the refrigerator and reheat in the microwave.
Here's how to make it:
- Put the chicken into a 13x9-inch baking pan or casserole dish that's been sprayed with cooking spray. Season the chicken with sea salt and black pepper on both sides.
- In a medium mixing bowl, add the mayonnaise, Parmesan cheese, smoked paprika, garlic powder, onion powder and 1 teaspoon of the parsley. Season with sea salt and black pepper, if desired. Stir to combine.
- Spread the mixture evenly over the chicken.
- Bake uncovered at 375 degrees F for about 25 to 30 minutes, or until chicken is cooked through. Chicken is done when it measures 165 degrees F on a food thermometer.
- Garnish with remaining fresh parsley and serve.
