Recently, I made this crispy Mediterranean salmon patties recipe that everyone loved. I wanted to see if it would taste as good using chicken instead of salmon. I'm happy to report that these crispy Mediterranean chicken patties are just as delicious (even though they're quite different).
These wholesome chicken patties are crispy and golden on the outside and moist and tender on the inside. They're somewhere between chicken tenders and chicken burgers, but better for you. These nutritious chicken patties offer the health benefits of bell peppers, the health benefits of dill and the health benefits of parsley, among others. I love that this nutritious and delicious chicken patties recipe is a flavorful addition to a heart-healthy Mediterranean Diet!
Here are the simple ingredients you need to make this gluten-free chicken recipe: ground chicken, onion, yellow bell pepper, minced garlic, an egg, Parmesan cheese, fresh dill, fresh parsley, mayonnaise, almond flour and extra virgin olive oil, for frying. You combine all the ingredients, form the patties then coat them in almond flour. You cook the Mediterranean patties in a skillet until crispy and golden. So quick and easy, and ready for dinner in only about 30 minutes!
I served these savory chicken patties for lunch – both with and without a bun – for a seriously tasty meal that packs a protein punch. They also would be delicious served as a fun snack with your favorite dip (I highly recommend tzatziki sauce)!

Ingredients
- 1 pound ground chicken
- 3/4 cup onion, diced
- 3/4 cup yellow bell pepper, diced
- 2 teaspoons minced garlic
- 1 egg
- 1 1/2 tablespoons fresh dill, diced
- 3 tablespoons fresh parsley, diced
- 3/4 cup Parmesan cheese, shredded
- 3/4 cup almond flour (divided)
- 2 tablespoons mayonnaise
- 3 tablespoons extra virgin olive oil, for frying
Here's how to make it:
- In a large mixing bowl, add the ground chicken, onion, bell pepper, minced garlic, egg, dill and parsley. Season with salt and pepper, if desired. Stir to combine. (You can use any color bell pepper you prefer.)
- Add the mayonnaise, Parmesan cheese and 1/4 cup of the almond flour. Stir to form into a soft mixture. (Instead of almond flour, you can use panko breadcrumbs, if desired.)
- Place the remaining 1/2 cup of almond flour in a shallow dish. Using your clean hands, form the mixture into patties. Roll each patty in the almond flour, ensuring it is coated in the flour. In a nonstick or cast iron skillet over medium-high heat, add enough olive oil to coat the bottom of the pan. Drop patties into the skillet and cook (in batches, if needed) patties until they're crispy and golden brown, about 5 to 7 minutes. (The number of patties will depend on how big you make each patty. I made some smaller and some bigger. If you want to make chicken burgers, then make your patties larger to fit a bun.)
- Flip patties carefully and cook until crispy and golden on the other side, another 5 to 7 minutes, or until desired doneness. Chicken is done when it reaches 165 degrees F on a food thermometer.
- Serve warm with your favorite side dishes.
- Store leftovers in an airtight container in the refrigerator. Reheat in the microwave or, for maximum crispiness, in a skillet or in the oven.
