Crispy Barbecue Spiced Baked Chicken Recipe Is a Dinner Winner by Donna John

Baked chicken recipes are a go-to of mine for dinner. I prefer baking bone-in chicken over boneless chicken, though I did recently do a good job baking boneless breasts (check out my spinach artichoke dip baked chicken breast recipe). This crispy barbecue spiced baked chicken recipe is a new favorite, and uses one of my favorite seasonings: award-winning barbecue chicken rub spice blend. This baked chicken is crispy, juicy, sweet, smoky and delicious.
All you need to make this easy chicken dinner is bone-in chicken pieces (I used chicken leg quarters) and the ingredients to whip up quick spice blend. Here is what you need to grab from your pantry and spice rack: brown sugar, garlic powder, onion powder, dried oregano, salt, chili powder and smoked paprika.
Serve this juicy roasted chicken for dinner with your favorite side dishes. I served mine with fresh green beans and cafeteria-style eggplant casserole. This chicken dinner will be on repeat!

Ingredients
Chicken
- 2 chicken leg quarters
Barbecue Seasoning
- 1/4 cup brown sugar
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 1/4 teaspoon dried oregano
- 1 tablespoon salt
- 1 tablespoon chili powder
- 1 tablespoon smoked paprika
Recipe Notes
- I cooked my chicken in a round Le Creuset baking dish, but any baking dish will work. If you're worried the chicken might stick, drizzle the bottom with a little olive oil. For easier cleanup, line the baking dish with aluminum foil or parchment paper.
- The chicken is cooked through at 165 degrees F internal temperature on a food thermometer.
- The cooking time will vary based on size and type of chicken pieces you use. I used chicken leg quarters, but you could use thighs, legs, wings or breasts. You could even roast a whole chicken.
- You have enough spice blend to double or triple the amount of chicken cooked without making more spice blend.
- You will have some of the barbecue spice blend leftover. Store the leftover spice blend in an airtight container, spice jar, mason jar or food storage bag to use later in other recipes.
- Nutritional information for this recipe includes the full amount of the seasoning ingredients. You will not use all of the seasoning, so amounts will vary.
Here's how to make it:
- Make the seasoning blend by combining all the ingredients in a small bowl. Whisk to combine.
- Put the chicken into a baking dish. Season liberally on both sides with the seasoning blend. (You will have leftover seasoning.)
- Bake in a preheated 375-degree F oven for about 30 to 45 minutes, or until chicken is crispy and cooked through. You can baste it occasionally with the drippings, if desired.
