Preparing chicken breasts in the oven is not my preferred cooking method. Typically, I cook chicken breasts in a skillet or on the grill. But this two-ingredient spinach artichoke dip baked chicken recipe has changed the way I think. These chicken breasts are moist, quick, easy and have all the flavors of artichoke spinach dip that we crave. This was definitely a winner winner chicken dinner!
No long shopping lists are involved in making this simple chicken dinner. Here is what you need to grab from your fridge: chicken breasts and spinach artichoke dip. That's it. The thin chicken breasts, or chicken cutlets, are seasoned with salt and black pepper, then a layer of dip is smeared on the top. Bake for about 20 minutes and get ready to dig in.
Variation: Try this shortcut baked chicken recipe with other types of dips. I used a spinach artichoke dip from Costco, but use your favorite brand.
Cooking Tip: If you can't find thin-cut chicken breasts or chicken cutlets, simply slice regular chicken breasts in half lengthwise.
These chicken breasts make a quick and easy high-protein family dinner during the week, but could be served to dinner guests. Serve the chicken with your favorite side dishes. I served mine with buttered carrots and roasted potatoes.

Ingredients
- 2 boneless/skinless chicken breasts (thin-cut or cutlets)
- 4 tablespoons spinach artichoke dip
Here's how to make it:
- Put the chicken breasts into an oiled baking dish. Season with salt and black pepper. (You can add other seasonings to the chicken breasts like garlic powder, onion powder, parsley flakes or whatever seasoning you like. For easier cleanup, you can cover the bottom of the baking dish with parchment paper or aluminum foil. I oiled the pan with olive oil.)
- Spread 2 tablespoons of spinach artichoke dip on each chicken breast, spreading to cover the entire top.
- Bake in a preheated 400-degree F oven for about 20 minutes, or until chicken is cooked through (165 degrees F internal temperature) and dip is lightly browned.
- Serve. Store any leftovers in an airtight container in the fridge. This recipe can easily be doubled or tripled. If you're cooking more than two chicken breasts, use a 13x9-inch baking pan.
