How to Dry Fresh Dill: Why You Need This Dill Dust Recipe In Your Life by Donna John

The farmers market is overloaded with bundles of fresh herbs right now. On my last trip, the fresh dill was beautiful – and irresistible. More dill than I could ever eat came home with me that day. Not wanting it to go bad (what a waste!), I decided to try my hand at drying fresh dill in the oven. Come to find out that drying fresh herbs is so easy. Why did it take me so long?
All you need to to make "dill dust," or homemade dried dill, is fresh dill, a baking sheet and parchment paper. The dill is washed well, dried well, then spread onto a lined baking sheet. Pop it into a low-temperature oven (225 degrees F) and let it do its thing. About 25 minutes later, you can crumble it up and google new recipes using dill.
Dill has health benefits, too! According to Healthline, "Fresh dill is very low in calories, yet a surprisingly good source of several essential vitamins and minerals, including vitamin C, manganese and vitamin A."
Use this dill dust in any recipe calling for dried dill. The dried herb is also delicious sprinkled on foods as a garnish, in salad dressings and marinades, stirred into grain salads or pasta salads, cooked in scrambled eggs (my favorite!) or added to homemade spice blends. How will you use it?

- Keep the dried dill in a cool dark place, like your pantry.

Here's how to make it:
- Remove the tough stems from the dill. Wash the dill and thoroughly dry on paper towels.
- Spread the dry dill onto a parchment paper-lined baking sheet.
- Bake in a preheated 225-degree F oven for 25 minutes. After that time, see if the dill will crumble easily. If not, continue baking until it does, about 5 more minutes (ovens vary).
- Remove the dill from the oven and let it cool for about 10 minutes, then crumble up the parchment paper to crush the dill.
- Store in an airtight container, spice jar or food storage bag.
