You know that scene in Runaway Bride when Richard Gere asks Julia Roberts how she likes her eggs? She has no idea how she likes her eggs in the movie, but I find myself every time saying to the TV, "scrambled with fresh dill, butter and black pepper." No overthinking this question for me. Try this easy buttery scrambled eggs recipe with dill for breakfast and you'll understand why.
When cooking scrambled eggs, I don't crack them into a bowl and whip the heck out of them first. To me, that makes them tough. I crack the eggs directly into the melted butter in the skillet, then gently swirl to break the yolks. I like to be able to see white and yellow – ribbons of yolk running through the whites. Another trick for soft scrambled eggs is to turn the heat off right before they are to your desired doneness. Let the residual heat from the pan cook them the rest of the way while you grab a plate and a fork.
If you don't have fresh dill for this egg recipe, buy some! OK, you can use dried dill in a pinch but fresh is best. Fresh cracked black pepper and sea salt is the only other seasoning you need in this scrambled egg recipe. And while we are dealing with an egg shortage and they are quite pricey now, sometimes you've just got to go for it. These eggs were worth every penny.

Ingredients
- 3 eggs
- 1 tablespoon butter
- fresh chopped dill
- fresh cracked black pepper
- sea salt
Here's how to make it:
- Melt the butter in a nonstick skillet over medium-low heat. Crack the eggs into the skillet. Season with a little sea salt.
- With a spatula, gently start swirling the eggs to break the yolks. Continue to gently swirl the eggs as they cook to your desired doneness.
- Stir in chopped fresh dill and season with cracked black pepper.
- Garnish with more chopped dill and fresh black pepper, if desired.
