Risotto is the quintessential Italian rice dish. The creaminess of a good risotto just can't be beat. Risotto is a rice dish where broth is added until it is creamy. The broth can be chicken, beef, seafood or vegetable broth, depending on the type of risotto being made. Other common ingredients in risotto are butter, onion, white wine and Parmesan cheese. Seafood is also a popular type of risotto in Italy.
This creamy mushroom risotto recipe is pure perfection and easy to make at home. Here is your shopping list: arborio rice, fresh mushrooms (check out the health benefits of mushrooms), olive oil, yellow onion, salted butter, white wine, chicken broth, Parmesan cheese, mascarpone cheese and fresh parsley for serving.
This vegetarian risotto can be served as a main dish for dinner or lunch, or as a side dish with your favorite proteins.

Ingredients
- 1 tablespoon olive oil
- 12 ounces mushrooms, any variety, thinly sliced
- 1/4 cup yellow onions, chopped
- 2 tablespoons salted butter
- 1 cup arborio rice
- 1/2 cup white wine (or extra chicken broth)
- 3 cups chicken broth (divided)
- 1/3 cup Parmesan cheese, freshly grated
- 1/2 cup mascarpone cheese
- fresh parsley, for garnish
Recipe Notes
- I prefer shiitake and oyster mushrooms for this recipe, but use your favorite.
- If you have it, use homemade chicken broth. If not, buy a good-quality canned broth.
Here's how to make it:
- Warm the broth by bringing it to a slow simmer in a saucepan. Add butter and onions to the saucepan, cook until tender, about 3 to 4 minutes. Stir in rice and cook until rice starts to lightly brown, about 5 minutes.
- Add wine and cook until evaporated while stirring. Add warm broth 1/2 cup at a time stirring until evaporated after each addition. This will take about 20 minutes.
- Add 1/2 cup of mascarpone cheese.
- Stir in mushrooms with any juices and Parmesan cheese (save a little for garnishing). Taste and add salt and pepper as needed.
- Garnish with more Parmesan and fresh herbs.
