Cottage cheese seems to be having a comeback! The healthy ingredient is showing up in all sorts of recipes, from cottage cheese ranch dressing to cottage cheese macaroni and cheese to cottage cheese muffins to cottage cheese mashed potatoes and so many more. Cottage cheese has many health benefits, including being high in protein.
When I saw this simple cottage cheese bread recipe, I knew I had to try it. It's so easy to make and uses only six ingredients! The cottage cheese keeps the loaf very moist and light in texture. I ate it warm with butter, but I will definitely add honey or jam the next time!
To make this light, moist gluten-free bread recipe, you will need a very short list of ingredients. Here is your shopping list so you can get baking: cottage cheese, rolled oats (check out the health benefits of oats), eggs, olive oil, baking powder and salt. That's it! The ingredients are blended together in a blender, poured into a loaf pan and baked for about 35 to 40 minutes.
Serve this delicious protein-rich homemade bread for a lovely breakfast or brunch, as a side dish with dinner or as a snack throughout the day.

Ingredients
- 2 cups cottage cheese
- 1 1/2 cups rolled oats (or gluten-free rolled oats)
- 4 eggs
- 2 tablespoons olive oil
- 1 tablespoon baking powder
- 1/2 teaspoon salt
Here's how to make it:
- If your cottage cheese has any liquid on top, strain as much as possible and discard. (Straining the liquid from the cottage cheese is an important step so you don't end up with soggy bread.)
- Add cottage cheese and the rest of the ingredients to a blender. (Oats are naturally gluten-free, but to be sure, use gluten-free rolled oats.)
- Blend until smooth.
- Pour the batter into a parchment paper-lined loaf pan.
- Bake in the preheated 350-degree F oven for 35 to 40 minutes. Remove when a toothpick comes out clean. If the top is getting too brown, place a loose piece of aluminum on top for the last 15 minutes.
- Remove from oven and let sit for 5 minutes before lifting parchment and placing the loaf on a wire rack. Serve warm with honey, jam or melted cheese on top. Store the bread in an airtight container.
