When we saw this slow-cooker chicken burrito bowl recipe from Clean Food Crush®, we just had to share it with you! Wow! This slow-cooked chicken burrito bowl is clean eating done right.

To make this Mexican-inspired chicken dinner, you will need the following ingredients: boneless chicken breasts, yellow onion, cooking oil, onion powder, chili powder, garlic powder, ground cumin, sea salt, black pepper, low-sodium chicken broth, diced tomatoes, black beans, corn, brown rice or quinoa and cheese. It's gluten-free goodness!

Ingredients
- 1 1/2 - 2 pounds boneless, skinless chicken breasts
- 1 small yellow onion, diced
- 2 tablespoons avocado oil or olive oil
- 3 teaspoons onion powder
- 3 teaspoons chili powder
- 2 teaspoons garlic powder
- 3 teaspoons ground cumin
- sea salt and freshly ground black pepper, to taste
- 3 cups organic, low-sodium chicken broth
- 15 - 16 ounces (about 2 cups) diced tomatoes, drained (use fresh, jarred or canned tomatoes)
- 1 1/2 cups cooked black beans (rinsed well if using canned)
- 1 cup frozen organic corn
- 2 1/2 cups cooked brown rice or quinoa
- 1/3 cup shredded colby-jack cheese (optional)
Recipe Notes
- Try this chicken recipe with ground chicken.
- For even more flavor, stir in some fresh cilantro and fresh jalapeno.
Here's how to make it:
- Place chicken and diced onion in a slow cooker. Pour in broth, tomatoes, oil and seasonings. Cook on low for about 5 hours.
- Remove chicken from slow cooker.
- Stir precooked rice or quinoa, corn and black beans into the hot liquid remaining in slow cooker. Let cook an additional 10 minutes on high.
- In the meantime, quickly chop or shred chicken. Add chicken back in, cook for 10 minutes on high, or just until chicken is hot.
- Serve with fresh diced tomatoes, plain Greek yogurt, green onion, diced avocado or guacamole. Top with cheese, if desired.
