Caramel Banana Pudding Cookie Parfait Recipe Is Just Plain Wow by 30Seconds Food

Caramel. Banana. Pudding. Cookie. Parfait. Five words that can bring a smile to your face on their own, but combine them and, well, wow. If you're looking for a decadent, sweet, surprisingly different dessert recipe, then don't look away. This caramel banana pudding cookie parfait is calling your name!
The pudding in this creamy dessert is made from scratch. The whole recipe comes together in about 30 minutes, plus you need time for them to get cold in the fridge. To make this sweet pudding dessert you will need eggs, salt, cornstarch, flour, granulated sugar, whole milk, banana extract, caramel sauce (jarred or homemade caramel sauce), bananas, cookies and whipped cream.
This layered dessert is what to serve after dinner with a cup of coffee or glass of iced cold milk. The recipe is also customizable because you choose the type of cookie you want in your parfait. What type of cookie will you use?

Ingredients
- 4 eggs (divided)
- 1/2 teaspoon salt
- 1/4 cup cornstarch
- 3 tablespoons flour
- 1/2 cup granulated sugar
- 3 cups whole milk (divided)
- 1 teaspoon banana extract
- 1 cup caramel sauce
- 3 medium bananas, sliced
- 2 cups crushed cookies (see Recipe Notes), plus more for garnishing
- whipped cream
Recipe Notes
- Use whatever kind of cookie you like. Vanilla wafers, chocolate sandwich cookies, cinnamon cookies, shortbread cookies, Golden Oreos or peanut butter cookies are all delicious. (Parfaits in photo are made with Oreos.)
- If you can't find banana extract, you can use vanilla extract.
- Don't cut the bananas too early or they will turn brown.
- Save the egg whites for breakfast (egg white omelet!) or to use in a meringue.
- If you don't have time to make homemade whipped cream, you can use non-dairy whipped topping.
Here's how to make it:
- Separate the yolk and white of three of the eggs. Set the whites aside for another use.
- In a mixing bowl, whisk together the granulated sugar, flour, cornstarch and salt. Stir the remaining whole egg into the egg yolks, then whisk it into the flour mixture. Stir in 1/2 cup of milk.
- In a saucepot, heat the remaining 2 1/2 cups of milk until warm. Slowly whisk in the sugar-egg mixture. Cook over medium heat until it thickens, about 8 to 9 minutes. Remove from the heat and stir in the banana extract.
- In four individual dessert cups or jars, layer the cookies, pudding, bananas and caramel sauce. Cover and refrigerate until cold.
- When ready to serve, top with whipped cream and more crushed cookie crumbs.
