My sister and I stayed in an Airbnb last weekend, which boasted a huge vegetable garden on the property. The host invited us to pick whatever we wanted. In addition to bowls full of blueberries and blackberries, which we ate while we were there, we both took several juicy, vine-ripened tomatoes home. After using one or two of these crimson gems on sandwiches, I had several leftover and this baked tomato recipe was the perfect, quick and easy way to take full advantage of them.
To make this farm-to-table baked tomato recipe, you will need just a handful of simple, wholesome, gluten-free ingredients. Here is your short list to gather: olive oil, fresh tomatoes, fresh rosemary, garlic, Parmesan cheese, salt and black pepper.

Ingredients
- 2 tablespoons olive oil (divided)
- 3 small to medium tomatoes, sliced about 1/2-inch thick
- 1 sprig fresh rosemary, snipped
- 2 cloves garlic, minced
- 2 tablespoons Parmesan cheese, shredded
- salt and ground black pepper, to taste
Recipe Notes
- You can substitute mozzarella cheese for the Parmesan.
- Be sure to use a sharp knife when cutting tomatoes.
- Store any leftover tomatoes in an airtight container in the fridge.
Here’s how to make it:
- Brush baking sheet with about 1 tablespoon of olive oil. Arrange tomato slices on the baking sheet. Sprinkle with, the Parmesan cheese, rosemary and garlic. Brush with remaining olive oil. Season generously with salt and pepper.
- Bake in preheated 350-degree F oven until tomatoes are tender and cheese is melted, about 5 to 10 minutes.
