Ingredients
- 2 pounds heirloom tomatoes, sliced
- 1 small red onion, sliced
- 1/2 cup chopped fresh herbs (basil, mint, oregano, dill, parsley, etc.)
Vinaigrette
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 4 cloves garlic, minced
- salt and black pepper, to taste
Recipe Notes
- If you can't find heirloom tomatoes, you can make this recipe with regular tomatoes.
- If you like more vinaigrette on your salads, double the vinaigrette ingredients.
- Sprinkle with some crushed red pepper flakes for a little spice.
- Change things up by adding some sliced fresh mozzarella cheese.

- Whisk together the vinaigrette ingredients in a bowl.
- Lay the sliced tomatoes on a serving plate or platter. Scatter the onions and fresh herbs on top.
- Drizzle with the vinaigrette. Top with more salt and black pepper, if desired.
