Ingredients
- 2 tablespoons butter
- 1/2 sweet onion, chopped
- 10 ounces prepared bruschetta topping
- 8 ounces (1 block) feta cheese
- 8 ounces bucatini pasta
- 1/8 cup fresh basil, torn
- 3/4 cup Parmesan cheese (divided)
- 1/2 cup fresh baby spinach
- salt and black pepper, to taste
Recipe Notes
- Bucatini is a thick, spaghetti-like pasta with a hollow center.
- Don't forget to reserve some pasta water!
- I bought bruschetta in the deli section in a plastic container, but you can also buy it jarred. You can also make your own bruschetta.
- Feel free to add more spinach. I cut back because my husband isn’t a fan!
Here’s how to make it:
- Melt the butter in an oven-safe skillet and sauté the onion over medium heat. Turn off the heat and stir in the bruschetta.
- Move the top oven rack to the top third of the oven. Place the feta block in the center of the bruschetta mixture.
- Transfer the skillet to a preheated 400-degree F oven. Bake for 25 minutes until the feta is soft and gooey and may be slightly brown on top.
- Meanwhile, cook the pasta until it’s al dente, about 9 to 10 minutes. Reserve about 1 cup of the hot pasta water while draining.
- Take the skillet out of the oven and stir well. Mix in 1/2 cup Parmesan cheese, fresh basil and spinach.
- Add a couple of tablespoons of the hot pasta water and toss until the spinach has wilted. Gradually add more pasta water to create a creamy sauce that has enough moisture to adequately coat the pasta.
- Add the drained pasta to the skillet and toss with the sauce. Add more pasta water if needed to blend well. Season with salt and pepper and sprinkle with the remaining Parmesan cheese before serving.
