This creamy chicken salad recipe takes your average chicken and mayo variety up a few notches, with flavorful additions like sliced grapes and nuts and sour cream combined with the mayonnaise. However, what really elevates this dish to another level is the tarragon, which, according to Epicurious, is “magic” when paired with chicken! Plus, the shortcut of starting with a rotisserie chicken for this salad makes it quick and easy enough to make on the fly.
To make this rotisserie chicken salad recipe you will need just a short list of simple ingredients. Ingredients
- 2 cups rotisserie chicken, shredded
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon dried tarragon, or to taste
- 1 tablespoon fresh lemon juice
- 1/4 cup celery, thinly sliced
- 1 cup red seedless grapes, halved
- 3/4 cup pecans or walnuts, chopped
Recipe Notes
- You can use a mixture of pecans and walnuts. I did! Almonds or cashews would also work for this recipe.
- If you like your chicken salad wetter, add a little more mayo.
- I used mostly white meat but included a little dark meat for the flavor.
Here’s how to make it:
- Shred your chicken using your hands.
- Mix the mayonnaise, sour cream, salt, black pepper, tarragon and lemon juice and add it to the bowl of shredded chicken. Blend well.
- Fold in the celery.
- Add the grapes and nuts.
- Chill the chicken salad for at least an hour before serving.
