Healthy desserts are my jam. And, during the warm weather months, healthy frozen desserts are key. This crazy creamy vanilla frozen yogurt recipe with fresh berries fits the bill perfectly. It's simple to make, super nutritious and absolutely delicious!
There are so many ways to make healthy ice cream. I've made nice cream and cottage cheese ice cream and even ricotta cheese ice cream, among others. All of those healthy ice cream recipes use a "secret ingredient" that adds nutrition to recipes (frozen bananas, cottage cheese and ricotta cheese) – ingredients that you can't really taste but add so many health benefits. Plus, all the recipes are very easy and quick to make (and decadent to eat).
My latest healthy ice cream recipe uses another secret ingredient to add nutrition: Greek yogurt. Greek yogurt provides not only a ton of nutrition (just check out all the health benefits of Greek yogurt), but also an extra creamy texture that makes this recipe downright addictive. Plus, I added fresh, ripe berries to up the nutritional value and add even more texture and flavor to the ice cream.
Instead of the typical ice cream, which is loaded with calories, fat and sugar, this creamy vanilla frozen yogurt is low-sodium, naturally sweet and made with nutritious ingredients. It's ice cream made healthy! The best part is that, in just a matter of minutes, you can turn plain Greek yogurt and fresh berries into a ready-to-freeze treat. The hardest part is waiting for it to firm up!
This simple, delicious ice cream recipe is made with just five ingredients and has a prep time of only about five minutes (with no ice cream maker needed). Plus, check out all the health benefits of strawberries and all the health benefits of blueberries. Here's what you need to make this light and creamy fro-yo recipe: low-fat plain Greek yogurt, honey, vanilla extract, and fresh strawberries and blueberries. You combine the Greek yogurt, honey and vanilla, then fold in the fruit before putting it into the freezer to set.
You'll be amazed by how extra-creamy delicious this frozen vanilla berry yogurt is. It's ideal for scooping into ice cream cones or serving in bowls. Because it's pre-loaded with sweet berries, you don't even need any ice cream toppings (but feel free to add them, anyway). Ingredients
- 2 cups low-fat plain Greek yogurt
- 1/4 cup honey
- 2 teaspoons vanilla extract
- 1 cup fresh strawberries, diced
- 1 cup fresh blueberries
Recipe Notes
- I washed my berries well before using. If you don't have fresh berries, you could use frozen.
- Instead of honey, you could use pure maple syrup (not the imitation stuff). Depending on how sweet you'd like your frozen yogurt to be, you can start with 1/4 cup and add more, to taste, if needed.
- You can try this recipe with other berries, such as raspberries or blackberries. You also can try it with diced ripe peaches or nectarines.
- Freeze the yogurt for at least four hours (or overnight) before serving.
- Serve the ice cream in a cone or in a bowl. Topping ideas include chopped nuts, chocolate chips, chocolate sauce, etc.
- Store leftovers in an airtight container in the freezer.
- For ice cream that has been frozen for several hours or overnight, allow to thaw at room temperature for a bit before scooping and serving.
Here's how to make it:
- Place the yogurt, honey and vanilla into a mixing bowl. (I used a Pyrex bowl with a lid that went directly into the freezer once I was done preparing the recipe.)
- Stir to blend.
- Add the berries.
- Fold them into the mixture. If you like, save a few berries to put directly on top.
- If it's not already in one, pour the mixture into a freezer-safe container. (If you saved some berries to put on top, do that now.)
- Freeze for at least four hours or until it firms up (I froze mine overnight). Serve in an ice cream cone or in a bowl on its own, or with your favorite ice cream toppings.
