To make these crispy pan-fried chicken patties, you will need to gather the following budget ingredients from your pantry and fridge: ground chicken (read about the health benefits of chicken), an egg, green onions, fresh parsley, mayonnaise, breadcrumbs, garlic powder, flour, olive oil, salt and black pepper. The ingredients are mixed together, shaped into patties, dusted with seasoned flour and pan-fried until golden.

Variation: Instead of making six patties, you could make four larger patties for sandwiches.

Ingredients
- 1 pound ground chicken
- 1 egg
- 4 green onions, chopped
- 1/4 cup chopped flat-leaf parsley
- 3 tablespoons mayonnaise
- 3 tablespoons breadcrumbs (regular or gluten-free breadcrumbs)
- 1 1/2 teaspoons garlic powder (divided)
- 1/3 cup flour (regular or gluten-free flour)
- 2 tablespoons olive oil, for frying
Here's how to make it:
- Put the ground chicken, egg, green onions, parsley, mayonnaise, breadcrumbs, 1 teaspoon of garlic powder, salt, to taste, and black pepper, to taste, into a mixing bowl. Mix together.
- Put the flour and remaining 1/2 teaspoon of garlic powder into a shallow bowl. Season with salt and black pepper. Use gluten-free flour and gluten-free breadcrumbs for a gluten-free dinner.
- Heat the olive oil in a skillet. Shape the chicken mixture into six patties. Dust the patties with the flour and then place in the hot oil.
- Cook the chicken patties about 3 to 4 minutes on the first side or until golden brown. Flip the patties over and continue to cook until golden and cooked through, about 3 to 4 minutes more. The chicken is done at 165 degrees F internal temperature. Use a food thermometer if you're unsure.
