It seems that cottage cheese is getting its moment, and no wonder. Cottage cheese has a great pack of protein (25 grams in 1 cup) and also contains potassium. (Read about the other health benefits of cottage cheese.)
Cottage cheese can easily be blended into recipes like these high-protein egg bites – and you don’t even know it’s there! The other thing I really like about this egg recipe is how easily it is adapted to include the ingredients you want! I’ve given you a base, but feel free to use what you like and have on hand to make these protein-rich egg bites your own.
To make these breakfast egg bites you will need eggs, cottage cheese, salt, black pepper, fresh spinach, sundried tomatoes and an optional onion. Serve these fluffy baked eggs for breakfast, brunch or as a healthy snack anytime.

Ingredients
- 8 eggs
- 1 cup cottage cheese
- salt and black pepper, to taste
- 1 - 2 cups fresh spinach, roughly chopped
- 1/2 cup sundried tomatoes, diced
- 1 small onion, diced (optional)
- 1 tablespoon olive oil, for cooking onions (optional)
Recipe Notes
- You can add anything you’d like to these versatile little bites. Think bacon, sausage, peppers, broccoli, mushrooms, cheese. Just give it a try. Pre-cook any breakfast meat and sauté the vegetables before adding.
- You can freeze the egg bites! Just thaw and reheat when you are ready to eat.
- Store the egg bites in an airtight container in the fridge for up to five days.
Here's how to make it:
- If you are using onion, place a skillet on medium heat with the olive oil. Dice your onion and add it to the hot pan. Stir and cook for 2 to 3 minutes.
- Chop the spinach and tomatoes and add them and the optional onions to the bottom of 12 greased or lined muffin cups.
- Place the eggs and cottage cheese in a blender.
- Blend on high for about 30 seconds.
- Pour the mixture evenly over the muffin cups (about 3/4 full). Give each one a gentle stir with a spoon to spread the ingredients.
- Place the pan into a preheated 350-degree F oven and bake for 25 to 30 minutes, or until the tops are set and the egg bites are cooked through. Let them rest for 10 minutes before taking them out of the pan.
- Serve warm.
