When you have a vegan son, hummus becomes part of every family get-together and dinner. Homemade hummus is so easy to make, I'm now skipping the premade hummus at the grocery store. This creamy two-ingredient artichoke hummus recipe is my new favorite! In five minutes you can have a bowl of flavorful hummus that tastes like it has a much longer ingredient list. This is because you use the flavored oil in the jar of marinated artichoke hearts. Genius!
To make this easy high-fiber hummus recipe you will need a jar of marinated artichokes and a can of chickpeas. The two ingredients are whirled together in a food processor or blender until creamy. The hummus is ready to be served as an appetizer or snack with pita chips, pita bread, naan bread, crackers, toasted bread or fresh cut-up vegetables.
This vegan recipe will make everyone happy, and you get the health benefits of chickpeas, too. Win-win.

Ingredients
- 15 ounces (1 can) chickpeas, drained and rinsed
- 6 ounces (1 jar) marinated artichoke hearts, with liquid
Recipe Notes
- You could use artichokes packed in water (drain the water off) and add your own spices and a bit of olive oil.
- Put the chickpeas into a colander and run them under cold water to rinse.
- You can throw a handful of fresh spinach into the blender to make a spinach artichoke hummus.
- Store the hummus in an airtight container in the fridge for up to one week or longer.
Here's how to make it:
- Put the chickpeas and artichokes with the liquid into a food processor or blender. Blend until smooth. Season with salt and black pepper, to taste, if desired.
- Serve with pita chips, crackers, bread or fresh vegetables.
