This is such an easy way to prepare chicken to either top a grain bowl or salad, like my meal prep chili lime chicken bowls. The flavor is delicious and you can put the chicken in to marinate for two hours or even overnight for a more pronounced lime taste. Any way you like it, this chili-lime chicken recipe is wonderful to add some great, low-fat and very tasty protein to your next lunch or dinner.
To make these zesty, flavorful chicken bites you will need just a handful of ingredients. Here is your shopping list: extra-virgin olive oil, chili powder, a lime for juicing and zesting, fresh garlic, ground cumin, salt and boneless, skinless chicken breast. After marinating, the chicken bakes up in about 15 to 20 minutes in the oven.
Keep the Mexican-inspired chicken in an airtight container in the fridge for quick meals or to toss in lettuce salads, grain salads, pasta salads, or serve it over rice or quinoa. You could also chop the chicken and use it as a taco, enchilada or burrito filling. The chicken bites would also be delicious in a sandwich. How will you use it?

Ingredients
- 2 tablespoons extra virgin olive oil
- 1 tablespoon chili powder
- 1 lime, zested and juice
- 2 cloves garlic, grated
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1 pound boneless, skinless chicken breast, cut into 1-inch pieces
Recipe Notes
- For some spice, sprinkle with crushed red pepper flakes.
- You could add some chopped green onion or regular onion to the pan when baking the chicken.
- Store the chicken in an airtight container in the fridge for up to three days.
Here's how to make it:
- Put the chicken and all remaining ingredients into a mixing bowl. Gently mix to coat all the chicken. Cover and refrigerate for 2 hours and up to overnight.
- When ready to cook, preheat the oven to 400 degrees F and line a baking sheet with parchment paper. Put the chicken in a single layer on the baking sheet.
- Bake for 15 to 20 minutes, or until the chicken is cooked through.
- Use the chicken in a salad, grain bowl, sandwich, taco, as a main dish or however you would enjoy it.
