Hasselback Yukon Gold Potatoes Recipe (Under 100 Calories Per Serving)

Roasted and baked potatoes are a side dish you cannot go wrong with – even when you're watching your calories. OK, you can go wrong if you bake a potato and load it up with sour cream, butter and bacon. What if I told you that you can have a creamy, crispy buttery tasting potato that was under 100 calories per serving? Enter these smoky, creamy baked hasselback Yukon gold potatoes.

This easy roasted potato recipe can be made for one, two or a large family. Simply grab a potato per person (or two if they're big eaters). I love recipes like this that I can just make enough for the two of us and not have any leftovers. To make this hasselback potato recipe you will need medium to large Yukon gold potatoes, olive oil cooking spray (see Recipe Notes) or olive oil, smoked paprika and parsley flakes. Because Yukon gold potatoes have a naturally buttery taste, you don't need to add butter.

Serve these creamy, crispy potatoes as a side dish for dinner with your favorite protein. I served mine with slow-cooker rotisserie chicken (you've gotta check out that recipe!), kale and cafeteria-style eggplant casserole.

  • The baking time will vary depending on your oven and the size of the potatoes. 
  • If you want to speed up cooking time, microwave the potatoes for about 6 to 10 minutes (depending on size) or until tender. Then, pop them into a hot oven to crisp up on top.
  • Try different seasonings like Italian seasoning, lemon-pepper seasoning, Cajun seasoning or Mediterranean seasoning.
  • Olive oil cooking spray has about 2 calories per spray. It's a great way to get the olive oil taste and crisp up food without all the calories.

Here's how to make it: 

  1. Use a sharp knife to carefully cut slits along the potatoes without going all the way through.
  2. Put the potatoes into a baking dish. Use your fingers to gently open the slits. Sprinkle with salt, black pepper, smoked paprika and parsley flakes, getting the seasonings down into the potatoes. Spray the tops with olive oil cooking spray or drizzle with a little olive oil.
  3. Bake in a preheated 375-degree F oven for about 40 to 50 minutes, or until potatoes are tender and crisp on top.
