To make this moist lemon pound cake you will need eggs, a can of sweetened condensed milk, lemons for juicing (and possibly zesting, too) and self-rising flour. The ingredients are mixed together, poured into a loaf pan and baked for about an hour. Let it cool and slice. So simple!

Serve this lusciously moist lemon cake for dessert or as a lemony snack any time. To make it even sweeter, you could drizzle it with a powdered sugar glaze, dust with powdered sugar or add a dollop of whipped cream. Maybe a lemon whipped cream?

  • For even more lemon flavor, stir 3 to 4 teaspoons of lemon zest into the batter. Grate the lemon on a fine grater or microplane.
  • Fresh is always best when it comes to lemon juice, so squeeze your own if you can. In a pinch, use bottled lemon juice.

Here's how to make it: 

  1. Whisk together the eggs, sweetened condensed milk and lemon juice in a mixing bowl. (If adding lemon zest, stir it in now.)
  2. Add the flour and stir until just combined. 
  3. Pour the batter into a 9x5-inch loaf pan that's been sprayed with nonstick cooking spray and lined with parchment paper. 
  4. Bake in a preheated 350-degree F oven for about 55 minutes, or until a toothpick comes out clean. Remove and cool completely before slicing.
