To make this moist lemon pound cake you will need eggs, a can of sweetened condensed milk, lemons for juicing (and possibly zesting, too) and self-rising flour. Ingredients
- 3 eggs
- 14 ounces (1 can) sweetened condensed milk
- 1/4 cup lemon juice
- 1 1/4 cups self-rising flour
Here's how to make it:
- Whisk together the eggs, sweetened condensed milk and lemon juice in a mixing bowl. (For even more lemon flavor, stir 3 to 4 teaspoons of lemon zest into the batter. Grate the lemon on a fine grater or microplane. Fresh is always best when it comes to lemon juice, so squeeze your own if you can. In a pinch, use bottled lemon juice.)
- Add the flour and stir until just combined.
- Pour the batter into a 9x5-inch loaf pan that's been sprayed with nonstick cooking spray and lined with parchment paper.
- Bake in a preheated 350-degree F oven for about 55 minutes, or until a toothpick comes out clean. Remove and cool completely before slicing.
