This spinach feta vegetarian dish is so versatile that we ate it for three different meals on three different days: breakfast, lunch and dinner The creamy baked vegetarian casserole recipe is such a hit and is so simple with just 10 minutes of prep time. This spinach feta casserole is definitely going into our regular rotation of vegetarian main dishes and side dishes.
To make this simple cheesy vegetable casserole recipe you will need eggs, spinach (check out the health benefits of spinach), ricotta cheese, feta cheese (feta may be the healthiest cheese in the world), onion, butter, Parmesan cheese, black pepper, garlic powder and nutmeg. The gluten-free ingredients are mixed together, poured into a baking pan and baked for about 40 minutes. The result is a creamy, cheesy main dish or side dish you will devour.
Serve this spinach recipe as a side dish with dinner, for breakfast or brunch with fresh homemade biscuits or as a vegetarian lunch or dinner. You could add a fresh garden salad on the side.

Ingredients
- 3 large eggs, beaten
- 2 cups ricotta
- 6 ounces (1 bag) fresh spinach, de-stemmed or 10 ounces (1 box) frozen chopped spinach, thawed and squeezed dry
- 1/3 cup crumbled feta
- 1/3 cup chopped sweet onion
- 1/4 cup butter, melted
- 2 tablespoons freshly grated Parmesan
- 1/8 teaspoon black pepper
- 1/8 teaspoon garlic powder
- dash of nutmeg
Here's how to make it:
- Mix all the ingredients together in a mixing bowl. If using frozen spinach, you can squeeze it dry by placing it, thawed, into a colander and pressing down with your hands to release the water. You can use cottage cheese instead of ricotta cheese. For some spice, add some crushed red pepper flakes.
- If using frozen spinach, pour the mixture into a greased 1.5-quart baking dish. If using fresh spinach, pour the mixture into a greased 9x9-inch baking pan.
- Bake in a preheated 350-degree F oven for 40 to 45 minutes or until the center is gently firm.
- Serve warm and enjoy for any meal. Store any leftovers in an airtight container in the fridge. Reheat in the microwave.
