Small Batch Rice Krispies Treats™ Recipe Helps Curb Temptation

The trouble with cooking for two is that dessert recipes usually make a lot. My husband and I definitely don't need to be tempted by a whole cake, pie or batch of fudge sitting on the counter. We both love Rice Krispies Treats™, but the original recipe makes a whole pan. What to do? Make a small batch of these marshmallow cereal treats.

To make these cereal treats for two, you need just three ingredients: butter, mini marshmallows and puffed rice cereal. You cook the sweet treats the same way you do the original Rice Krispies Treats™ recipe, but they're put into a loaf pan instead of a 13x9-inch pan. Smart, right?

Enjoy these marshmallow treats for  dessert after dinner or as a sweet snack.

  • Store the cereal treats in an airtight container on the counter.
  • Love vanilla? Stir in a drop or two of vanilla extract.
  • Use the butter wrapper to push down the cereal mixture into the pan. 

Here's how to make it: 

  1. In a soup pot, melt the butter. 
  2. Add the marshmallows and stir until almost melted. Turn off the heat. 
  3. Add the cereal and stir to coat.
  4. Spread into a 9x5-inch loaf pan that's been lined with parchment paper or buttered. Press the mixture down to an even thickness. Cool completely before cutting into squares.
