Anything cinnamon is a hit at my house. My grandma made the best snickerdoodle cookies (check out her recipe), and I make them often. But sometimes I don't have all the ingredients (aka shortening) and want something a little quicker and easier. Enter this cake mix shortcut snickerdoodle cookies recipe.
These easy cake mix cookies have just five simple ingredients and mix up in minutes. Here is what you need to grab for these moist cinnamon cookies: a box of white cake mix, butter, an egg, granulated sugar and cinnamon. The cake mix, melted butter and egg combine to form a dough that's rolled in cinnamon-sugar. Bake and in about 10 minutes you'll have a plate of hot, low-sodium cookies to devour. (Check out the health benefits of cinnamon.)
Serve these cookies for dessert with a cup of coffee, or add them to your holiday cookie trays. This is one shortcut recipe you'll want to make over and over again.
Cuisine: American
Prep Time: 10 minutes
Cook Time: 8 minutes (ovens vary)
Total Time: 18 minutes
Servings: 48 (makes about 4 dozen)
Ingredients
- 15 ounces (1 box) white cake mix
- 1/2 cup butter, melted
- 1 egg
- 2 tablespoons granulated sugar
- 1 - 1 1/2 teaspoons ground cinnamon
Here's how to make it:
- In a mixing bowl, stir together the cake mix, melted butter and egg. Stir until a dough forms. (If you want double cinnamon, sprinkle some into the batter. I used Betty Crocker™ Super Moist™ White Cake Mix.)
- In a small bowl, stir together the sugar and cinnamon.
- Roll the dough into 1-inch balls. Roll the balls in the cinnamon-sugar and place on a baking sheet. (The number of cookies you get depends on how big you make them.)
- Bake in a preheated 350-degree F oven for about 8 minutes, or until the edges are set. Cool 1 minute on the baking sheets and then remove to cool completely. Store the cookies in an airtight to container to keep them fresh.
