While raspberries might not be what you'd expect to serve with salmon, let me assure you that it's really delicious. In this easy seafood recipe, fresh raspberries are blended with orange juice, Greek yogurt and honey to create a healthy, creamy and tangy sauce that bursts with flavor and nutrition. You prepare the raspberry sauce in a blender, then spoon half of it over the salmon in a baking dish. After baking the salmon, you spoon the rest of the sauce over the salmon before serving.

Ingredients

  • 1 pound (16 ounces) fresh salmon filet
  • 1 cup fresh raspberries
  • 1/2 cup low-fat plain Greek yogurt
  • 1/3 cup fresh-squeezed orange juice
  • 1 tablespoon honey

  • If you don't have fresh raspberries, you can use frozen.
  • If you don't have fresh-squeezed orange juice in a bottle, you can squeeze the juice from fresh oranges yourself. In a pinch, you can use regular orange juice.
  • Store leftovers in an airtight container in the refrigerator.

Here's how to make it:

  1. Place the salmon filet in a casserole dish or baking pan lined with aluminum foil. Season with salt and pepper, if desired.
  2. Add the raspberries, orange juice, Greek yogurt and honey to a blender.
  3. Blend until smooth.
  4. Pour half of the sauce over the salmon, ensuring the salmon is covered in the sauce.
  5. Bake the salmon at 375 degrees F for about 15 minutes, or until desired doneness. Salmon is done when it reaches 145 degrees F on a food thermometer.
  6. Remove from oven and spread the remaining raspberry sauce on top of the salmon. Serve over rice and/or with your favorite side dishes.
