- If you don't have fresh raspberries, you can use frozen.
- If you don't have fresh-squeezed orange juice in a bottle, you can squeeze the juice from fresh oranges yourself. In a pinch, you can use regular orange juice.
- Store leftovers in an airtight container in the refrigerator.
Here's how to make it:
- Place the salmon filet in a casserole dish or baking pan lined with aluminum foil. Season with salt and pepper, if desired.
- Add the raspberries, orange juice, Greek yogurt and honey to a blender.
- Blend until smooth.
- Pour half of the sauce over the salmon, ensuring the salmon is covered in the sauce.
- Bake the salmon at 375 degrees F for about 15 minutes, or until desired doneness. Salmon is done when it reaches 145 degrees F on a food thermometer.
- Remove from oven and spread the remaining raspberry sauce on top of the salmon. Serve over rice and/or with your favorite side dishes.
