- 1/4 cup extra virgin olive oil
- 1/2 cup sweet onion, diced
- 1 red bell pepper, diced (about 1 cup)
- 16 ounces fresh spinach, washed and dried
- 1/2 cup feta cheese, crumbled
- 2 cups low-fat cottage cheese
- 1/3 cup grated Parmesan cheese
- 1 cup heavy whipping cream
- 4 eggs
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/4 teaspoon turmeric
- 1/8 teaspoon nutmeg
- 1/2 teaspoon Mediterranean seasoning

Here's how to make it:
- In a large saucepan, add the olive oil, onion and red pepper. Cook for about 3 minutes.
- Add the spinach and cook until wilted, about 2 minutes.
- Remove from heat and stir to combine vegetables. Allow mixture to cool for a few minutes.
- In a large mixing bowl, add the cheeses, heavy whipping cream, eggs and seasonings. Stir to combine.
- Add the vegetable mixture to the cheese mixture. Stir to combine.
- Pour the combined mixture into a 13x9-inch casserole dish that's been sprayed with cooking spray.
- Place baking dish in a preheated 350-degree F oven and bake for about 40 minutes, or until it's set and cooked through. Dish should be golden brown and solid throughout.
