Easy Tomato Soup Stew Recipe: A Hearty, Budget-friendly Dinner

I spent a lot of years trying to get red meat and potatoes into my kids' diet. Most off my kids only liked processed potatoes like fries, tater tots, hash browns or fried potatoes. Never baked or mashed. Meat? They did not like the texture. So hiding these ingredients in something they liked was my solution.

It is seldom everyone likes something I make, and everyone loved this tomato soup stew recipe. My kids like anything with red tomato-based sauce or broth. They love ketchup and also green beans. I can work with this! Here's the hearty soup recipe I came up with and my entire family loved it.

I have made this many times over for about a decade. The rich tomato soup is super fast, easy and inexpensive to make. You probably have all the ingredients on hand. Here is what you need to make this comforting tomato soup stew: ground beef, an onion, a big can of tomato soup, tomato sauce, ketchup, green beans and potatoes.

Serve this hearty tomato soup stew recipe for lunch or dinner. Add a salad and bread on the side.

Ingredients

  • 1 pound ground beef
  • 1 onion, diced
  • 1 family-size can (23 ounces) tomato soup
  • 1 can (14 ounces) tomato sauce
  • 1/4 cup ketchup
  • 1 bag (12 ounces) frozen green beans or 1 can (14 ounces) green beans, drained
  • 6 cups potatoes, cut into bite-sized pieces

Here's how to make it: 

  1. Peel potatoes and cut into bite-sized pieces. Place in a large pot and boil until cooked, but not mushy, about 10 to 15 minutes depending on size and type. Drain.
  2. While the potatoes cook, brown the ground beef and onion in a skillet. Drain fat. 
  3. Add the potatoes and remaining ingredients to the ground beef and onion. Heat through, about 10 to 15 minutes. Serve.
