Crispy Baked Fish Recipe With Cheese Sauce: A Mexican-Inspired Seafood Dinner

Fish can be a delicious part of a healthy diet. But sometimes home cooks don't know how to take this simple ingredient and make it exciting. That was me years ago, when I thought the only way to cook fish was to season it with salt and pepper and pan-fry it. Delicious, but it can get boring. Enter this crispy baked fish recipe with a homemade cheese sauce that was inspired by a restaurant dish. Delish!

The fish is dipped into melted butter then breadcrumbs. While the fish bakes in the oven, whisk up the simple cheese sauce. The cooked fish is drizzled with the sauce and topped with fresh tomatoes, green onions and jalapeno, which adds freshness. The seafood dinner is on the table in about 30 minutes.

Ingredients

  • 4 fish fillets, about 4 ounces each
  • 3 teaspoons butter, melted
  • 3 tablespoons dry breadcrumbs
  • 1 tablespoon flour

Cheese Sauce

  • 3 teaspoons flour
  • 3/4 cup milk
  • 1/2 cup shredded cheddar cheese
  • 1 1/2 teaspoons Dijon mustard

Topping

  • 2 green onions, chopped 
  • chopped jalapeno, to taste
  • 1 small tomato, chopped

  • Use your favorite white fish for this recipe. Catfish, orange roughy, halibut, cod or tilapia are good options.
  • For even crispier fish, mist the top with nonstick cooking spray before baking.

Here's how to make it: 

  1. Put the melted butter into a shallow bowl and the breadcrumbs and 1 tablespoon flour into another bowl. Season the fish with salt and pepper. Dip the fish into the butter then into the breadcrumb-four mixture to coat. Place in a greased baking dish. Bake in a preheated 400-degree F oven for about 15 to 20 minutes, or until cooked through.
  2. While the fish bakes, whisk the flour and milk together in a saucepot. Bring to gentle boil and cook, stirring, for about 2 minute or until thickened. Stir in the cheese and mustard until cheese has melted. 
  3. To serve, top the fish with some of the cheese sauce and sprinkle with chopped green onions, jalapeno and tomato.
