There's something about the Amish that just fascinates me. Visiting Pennsylvania Dutch Country is on my bucket travel list. One day. For now, I can just read about their lifestyle and try Amish recipes. Amish recipes are pure comfort food. Potatoes are a big part of their diet, and just like everyone else I know, they love a good french fry and potato wedge.

This easy Amish Parmesan potato wedges recipe is like those wedges you get in a steakhouse. But in this recipe, the potatoes are coated in a dry mix before being baked in butter. Yum, right? To make these four-ingredient potato wedges you will need butter, flour, Parmesan cheese and potatoes. The potatoes are cut into wedges, soaked in water and then dusted in the flour that's mixed with the Parmesan, salt and black pepper. Bake for about one hour and they're ready to be eaten hot out of the oven.

Serve these crispy potato wedges as a side dish with your favorite dinner, or as an appetizer with a dipping sauce.

Ingredients

• 1/3 cup butter
• 1/4 cup all-purpose flour or gluten-free flour
• 1/4 cup freshly grated Parmesan cheese grated
• 6 medium potatoes, cut into wedges

Here's how to make it: 

1. Turn the oven on to 375 degrees F. Put the butter on a baking sheet with sides and let it melt in the oven while you prepare the potatoes. Take the baking sheet out of the oven when the butter is melted. I use Yukon gold potatoes for this recipe, but all-purpose russet potatoes will work, too. For easier cleanup, you can line the baking sheet with parchment paper.
2. Put the cut potatoes into a bowl of water to soak.
3. In a mixing bowl, whisk together the flour and Parmesan cheese. Season with salt and pepper, to taste. For gluten-free potatoes, use gluten-free flour.
4. Take the potatoes out of the water and dip them, to coat, in the flour mixture. Lay them in a single layer in the melted butter.
5. Bake for about 1 hour or until golden brown, flipping halfway through cooking time. Sprinkle with additional grated Parmesan cheese, if desired. These Amish potatoes are typically served with sour cream on the side for dipping. If you prefer, serve with ranch dressing or your favorite dipping sauce.
