Crazy Good Crock Pot™ Peach Cobbler Recipe (Don't Forget the Vanilla Ice Cream)

Peach cobbler is my all-time favorite dessert. Growing up, if peach cobbler was on the menu, I ordered it. There was even a restaurant that had peach cobbler on Sundays, so often we'd have lunch there so I could indulge. My mom and grandma had a recipe for out-of-season peach cobbler that they both made. While this recipe is delicious, it's made with canned peaches. Not complaining, because I've eaten my weight in it over the years. But there's just something about a peach cobbler in the summer made with fresh, juicy peaches.

This easy peach cobbler recipe is not only easy and super tasty, but it's made in the slow cooker. So while you're visiting with company or doing your thing, it's cooking and becoming insanely delicious – without you. For this slow-cooked peach cobbler recipe you'll need the following ingredients: fresh peaches, orange juice, cornstarch, cinnamon, nutmeg, ginger, brown sugar, whole-wheat flour, all-purpose flour (see Recipe Notes), baking powder, salt, butter, milk and granulated sugar.

Serve this peach cobbler straight out of the slow cooker, warm, with a big scoop of vanilla ice cream on top. Peach cobbler is one dessert that just has to be a la mode. Store the leftovers in an airtight container and reheat in the microwave. This is one peach dessert recipe you don't want to lose.

Recipe Notes

  • To help absorb extra moisture, you can put paper towels under the slow cooker lid.
  • You can substitute 1 cup of whole-wheat pastry flour for the all-purpose flour and the whole-wheat flour, or use all all-purpose flour.
  • Try substituting peach nectar for the orange juice for even more peach flavor.

Here's how to make it: 

  1. Stir together the peaches, orange juice, cornstarch, cinnamon, ginger and 1/4 cup brown sugar in a mixing bowl. Pour into a 6-quart slow cooker that's been sprayed with nonstick cooking spray. 
  2. In another mixing bowl, whisk together the flours, baking powder, salt and remaining 1/2 cup brown sugar. Add the cold, cubed butter. Use a pastry cutter or your fingers to cut it into the flour until it resembles coarse crumbs. Stir in the milk. 
  3. Drop mounds of the batter over the peaches. Sprinkle with the 1 tablespoon granulated sugar. Cover and cook on high for about 2 to 3 hours or until the top is golden and the edges are cooked. Let the cobbler rest about 15 minutes before serving.
