After a day at the hospital visiting a family member, my husband and I got home to growling stomachs and a leftover almost whole large meat-lovers pizza in the fridge. The pizza was in the oven warming and crisping back up when I decided I needed I salad or something cool and refreshing on the side. With only 4 minutes and change left before the pizza came out of the oven and no lettuce in the house, I quickly grabbed ingredients for a pea salad – and it was ready before the timer went off. No joke. This salad was ready in less than five minutes. This record-setting high-protein and high-fiber pea salad was the perfect crunchy side dish for the hot pizza.
You don't have to be on a time constraint or like to challenge yourself to enjoy this quick and easy gluten-free pea salad. All I grabbed to make this salad recipe was green peas, cheddar cheese, green onions, red onions and a bottle of ranch dressing. The peas were frozen, but thaw almost immediately under warm water. Quickly (and carefully!) chop up the onions, grate the cheese if you don't have a bag of pre-shredded, and pour in some ranch. Season with salt and pepper and this pea salad is ready to go. Use as little or as much of each ingredient as you need for number of servings desired.
Serve this crunchy side dish with chicken, pork, burgers, steaks, hotdogs or ... pizza! This is a great side dish to throw together for family get-togethers, potlucks or cookouts.

Ingredients
- frozen green peas
- cheddar cheese
- green onions
- red onions
- ranch salad dressing
Here's how to make it:
- Pour desired amount of frozen green peas into a colander or mesh strainer. Run them under hot water for about 10 to 20 seconds. Let them drain.
- While the peas drain, chop desired amount of green onion and red onion. Put it into a mixing bowl.
- Grate desired amount of cheese into the bowl or grab a handful of pre-shredded cheese. (Crisp crumbled bacon or prosciutto would be delicious in this pea salad.)
- Add the peas and desired amount of ranch dressing. Season with salt and pepper. (Any creamy salad dressing would work for this pea salad. Next time I'm going to use creamy Italian dressing. In a pinch, mayonnaise would be fine, too.) Stir to combine. Serve. Store any leftovers in an airtight container in the fridge.
