Easy 5-Ingredient Mediterranean Fried Chicken Thighs Recipe: A Moist & Flavorful Dinner by Elisa Schmitz
Chicken thighs are one of my go-to weeknight dinners. That's because chicken thighs are easy to prepare and turn our moist and juicy, so the whole family loves them. This simple Mediterranean fried chicken thighs recipe serves up a moist and flavorful dinner in only about 20 minutes.
But this isn't a typical fried chicken recipe. The boneless/skinless chicken thighs are fried in extra virgin olive oil, which is a heart-healthy staple of the Mediterranean Diet. The other ingredients you'll need for this savory fried chicken recipe include roasted garlic powder, ground turmeric and Mediterranean or Italian herb seasoning. Dinner is served in no time at all.
I served these tasty chicken thighs with turmeric rice and sautéed carrots, and they were quickly devoured. A perfect weeknight dinner you can feel good about serving to your family!

Ingredients
- 6 boneless, skinless chicken thighs
- 1/4 cup extra virgin olive oil
- 1 teaspoon roasted garlic powder
- 1 teaspoon ground turmeric
- 1 teaspoon Mediterranean seasoning or Italian herb seasoning (I used Mediterranean seasoning)

Recipe Notes
- You can use Mediterranean or Italian herb seasoning blends for this recipe. If you don't have either of those seasoning blends, you could use a combination of oregano, basil, thyme, rosemary or parsley, etc.
- Season with salt and pepper, to taste, if desired.
- Store leftovers in a small airtight container in the refrigerator.
Here's how to make it:
- In a large saucepan, skillet or sauté pan over medium heat, add the olive oil and ensure the pan is coated in it. Add the chicken thighs to the olive oil in the pan.
- Sprinkle the chicken with the roasted garlic powder, turmeric and herb seasoning blend (you may have some left over, which you can use on the other side in a few minutes).
- Fry the chicken thighs for about 7 minutes, then flip the thighs over in the pan. Add additional seasoning to this side of the chicken thighs, if desired. Fry chicken thighs for an additional 7 minutes or so, or until chicken is cooked through (the temperature should reach 165 degrees F on a meat thermometer).
- Serve over rice and vegetables, or with your favorite sides.
