This flavorful chicken noodle soup recipe was found in the most unusual place – my gift wrap drawer. Needing a birthday card, I was flipping through a box of cards I've had for over 20 years in a box. This get-well card caught my attention because of the chicken soup recipe, which, as it turned out, is delicious.
This "feel better" chicken soup recipe has a flavorful broth because of a lot of garlic, poultry seasoning and cayenne pepper. If you need a bowl of feel-good goodness, here's your shopping list for this high-protein recipe: chicken broth, chicken meat, onion, garlic vegetable oil, celery, carrots, poultry seasoning, cayenne pepper and dry noodles. You will need 10 cloves of garlic (yes, 10!) for the soup. When you're under the weather, a flavorful broth can wake up those taste buds and warm the soul. The greeting card made me smile with the cooking tips:
- "You'll need a nice plump young chicken. Don't use some big tough old rooster, 'cause chewin' on that won't make anybody feel better."

Ingredients
- 10 cups chicken broth
- 1 pound boned chicken, cut into bite-sized pieces
- 1 tablespoon vegetable oil
- 1 large onion, chopped fine
- 10 cloves garlic, minced
- 1 large stalk celery, chopped
- 2 large carrots, chopped
- 1 teaspoon poultry seasoning
- up to 1 teaspoon cayenne pepper, or to taste
- 1 cup dry noodles
Here's how to make it:
- Bring the chicken broth to a boil in a soup pot. (You could also use a dutch oven or stock pot.)
- In a skillet, cook the onion and garlic in the oil until soft, then add the carrots and celery. Cook for a few minutes, then put them into the boiling chicken broth.
- Add the chicken meat, poultry seasoning and cayenne pepper, to taste. Season with salt and black pepper. Simmer until chicken and vegetables are tender.
- Add the noodles during the last 10 minutes of cooking. Garnish with chopped parsley, if desired. Serve. Store the soup in an airtight container in the fridge and reheat in the microwave.
