Easy Watermelon Cupcakes Recipe Will Be the Star of Summer Parties & Holidays by 30Seconds Food

Along with strawberries and cherries, watermelon is the fruit of summer. Instead of cutting open a watermelon and eating it the old-fashioned way, why not turn cake into watermelon cupcakes! These easy watermelon cupcakes not only look like watermelon, but taste like watermelon, too!

Here's what you'll need to make these fun watermelon cupcakes: a box of white cake mix, lemon-lime soda, egg whites, vegetable oil, watermelon gelatin, food coloring, butter, powdered sugar and mini chocolate chips. The cupcakes are baked for about 20 minutes in the oven then cooled completely. While the cupcakes cool, beat together the frosting ingredients. Pile the watermelon-flavored frosting high on top of the cupcakes and then sprinkle with mini chocolate chips for the "seeds."

Cupcakes

• 1 box (15 ounces) white cake mix
• 1 cup carbonated lemon-lime soda
• 3 egg whites, at room temperature
• 1/4 cup vegetable oil
• 1 box (3 ounces) watermelon gelatin
• red food coloring (optional)

Frosting

• 2 cups (4 sticks) butter, softened
• 6 cups powdered sugar
• 1 box (3 ounces) watermelon gelatin
• 6 tablespoons lemon-lime soda (or as needed)
• red food coloring 
• 1/4 cup mini chocolate chips

Recipe Notes

• Be sure to cool the cupcakes completely before frosting. 
• If you can find them, use green baking liners to represent the watermelon rind. 
• Store the cupcakes in an airtight container in the refrigerator. 
• For added flavor, stir some mini chocolate chips into the cake batter before baking. 
• Gently press the mini chocolate chips into the batter so they don't fall off. 

Here's how to make it: 

1. Line 24 muffin cups with baking liners (preferably green). Set aside. 
2. Beat together the cake mix, lemon-lime soda, egg whites, oil and watermelon gelatin in a mixing bowl for about 2 minutes. Add red food coloring, if desired, to reach desired color. Pour the batter into the prepared muffin cups. Bake in a preheated 350-degree F oven for about 18 to 20 minutes or until a toothpick comes out clean. Remove and cool completely. 
3. To make the frosting, beat the butter, powdered sugar, watermelon gelatin, lemon-lime soda and red food coloring until smooth and fluffy. Add more soda, if needed, to reach desired consistency. 
4. Frost the cupcakes generously with the frosting. Sprinkle with the chocolate chips.
