While it's not officially summer yet (my family can't wait!), you can still find sweet, juicy watermelons at the store. With just two ingredients, no churning and minimal prep, this delicious watermelon sherbet recipe comes together quickly.
This two-ingredient recipe is kind of stuck in the middle between being a sorbet and a sherbet. A sorbet is just fruit juice and sugar, while a sherbet is fruit juice, sugar and a little dairy. All you need for this fruit "sherbet" recipe is a can of sweetened condensed milk and cubes of frozen fresh watermelon. Blend the watermelon cubes and sweetened condensed milk in a blender until smooth. Pour the fruity mixture into a loaf pan or other container and freeze for at least two hours.
This is not a creamy ice cream, but an icy sorbet-like sherbet. The water in the watermelon creates a refreshing icy treat. The sweetened condensed milk adds the sweetness.
