Outdoor Skillet Brownies Recipe: Summer Dessert Done Right (Perfect for Father's Day)

June is the perfect time to celebrate summer and Dad (Father's Day is Sunday, June 18) with a menu made on the grill. Dessert is no different! What's more fun and challenging than attempting to make brownies outdoors? This skillet brownie recipe is one that won't soon be forgotten!

Wanna skip the grill, no problem. You can make the brownies in an oven and finish them outdoors for the last five to 10 minutes of baking so they pick up a smoky flavor. The chocolate brownies are ready when a toothpick is pulled out slightly clean, indicating a moist center.

Serve these grilled brownies with a big scoop of vanilla ice cream. You can also add ice cream to the center of the brownie and place it in the center of the table with spoons for everyone to share! A delicious and memorable summertime dessert.

Chef Notes

  • Success will be maintaining a grill temperature of around 350 degrees F degrees. You can do so by cracking your grill lid or adding more flame. Keep an eye on it because the weather will create different temperatures for everyone based on your location's climate.
  • If using a charcoal grill, open the bottom vent completely – a light charcoal chimney starter filled with briquettes. When briquettes are gray ash, pour them onto the bottom grate of the grill and then push them to one side of the grill. Adjust vents as needed to maintain an internal temperature of 350 to 400 degrees F.
  • If using a gas grill, preheat to medium 350 to 400 degrees F on either your grill's left or right side. If using an oven, preheat to 350 degrees F until the toothpick pulls slightly damp and crumbly, about 35 to 45 minutes.

Ingredients

  • 3/4 cup all-purpose flour
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon baking soda
  • 7 ounces unsweetened chocolate, chopped
  • 1/2 cup salted butter, plus more, melted, for greasing skillet
  • 2 tablespoons oil
  • 3 large eggs
  • 1 cup packed light brown sugar
  • 1 cup granulated sugar
  • 2 teaspoons vanilla extract
  • vanilla ice cream, for serving (optional)

Here's how to make it: 

  1. Whisk flour, salt and baking soda in a small bowl. Set aside. If grilling, place a heatproof bowl on indirect heat on the grill's side without direct heat under it. If using an oven, heat a medium saucepan over low heat on the stovetop.
  2. Add chocolate, butter and oil to the small bowl or saucepan and cook, stirring constantly, until ingredients are melted and smooth. Remove from heat. Let cool slightly, about 5 minutes. Add eggs, brown sugar, granulated sugar and vanilla to the chocolate-butter mixture. Stir to incorporate. Add flour mixture and stir gently until just combined.
  3. Generously butter a 10-inch cast-iron skillet. Pour in batter, spreading evenly. Place the skillet on the grates over indirect heat (the side without the coals or flames). Cover the grill and bake until a wooden pick inserted in the center of the brownies comes out almost clean, about 40 to 45 minutes. If using an oven, bake in preheated oven for about 35 minutes. Remove from heat and place in the closed lid grill 10 minutes before completion, and continue to bake for 10 additional minutes.
  4. Cool in the skillet. Scoop and serve with ice cream.
