Lazy Cabbage Rolls Recipe: This Easy Cabbage Casserole Recipe Lets You Embrace Being Lazy

If you love cabbage rolls and cabbage casseroles, this may be your new favorite recipe. These lazy cabbage rolls are made like you would make a meatball. Think of meatballs with all those cabbage roll flavors inside. Sounds good, right? This lazy cabbage rolls recipe takes a little work, so you can't be totally lazy when making it. But it's worth every minute because this easy dinner recipe is so tender, juicy and full of flavor.

The lazy cabbage rolls are made with cooked white rice, shredded cabbage, ground pork, ground beef, onion, eggs, seasoned salt and fresh parsley or dill. The ingredients are mixed together, shaped into large "meatballs" and put into a casserole dish. The sauce is super easy to make. Cook grated carrot and onion in butter and olive oil until soft, then stir in marinara sauce and water. The enhanced tomato sauce is poured over the cabbage rolls and everything is baked until cooked through, about 45 minutes. (You now have 45 minutes to be completely lazy while this casserole recipe bakes!)

You could use all ground beef for this recipe, or use ground turkey instead. Serve these lazy cabbage rolls with your favorite side dishes or just eat them as a complete dinner. This recipe could be cut in half for smaller families or if you don't want leftovers.

Ingredients

  • 4 cups cooked white rice
  • 1/2 medium cabbage, shredded
  • 1 pound ground pork
  • 1 pound ground beef
  • 1 large onion, finely chopped (divided)
  • 2 eggs
  • seasoned salt (to taste)
  • 2 tablespoons minced fresh parsley or dill 

Sauce

  • 1 tablespoon olive oil
  • 3 tablespoons butter
  • 1 large carrot, grated
  • 2 cups marinara sauce
  • 3 cups water

Here's how to make it: 

  1. Put the shredded cabbage into a bowl. Pour boiling water over the cabbage and let it sit until softened, about 10 minutes. Drain well and squeeze out excess moisture. 
  2. In a mixing bowl, combine the cabbage, ground pork, ground beef, cooked rice, half the chopped onion, eggs, seasoned salt and parsley. Season with black pepper. Mix well. Shape the mixture into large meatball shapes (about 1/2 cup each). Put the cabbage rolls into a greased casserole dish.
  3. To make the sauce, heat the olive oil and butter in a skillet. Add the remaining chopped onion and carrot. Cook until soft, about 3 minutes. Add the marinara sauce and water. Bring to a boil. Season with salt and pepper. Pour the sauce over the cabbage rolls. 
  4. Cover the baking dish with foil and bake in a preheated 425-degree F oven for about 45 minutes. Spoon the sauce over the cabbage rolls and serve.

Hmmm ...I used to like cabbage rolls and am attempting to eat more cabbage (just like with cucumbers, just gotta find the right recipes). Would you be offended if I attempted to make them with lentils as my protein? Pescatarian here and dont like the new fangled impossible meat like products.
