When someone says they want poppers, most of us think of those cream cheese-stuffed jalapenos wrapped in bacon. Get that thought out of your head! Instead, think of these healthier chicken and zucchini poppers. These zucchini fritters are crispy and irresistible.
The easy high-protein zucchini poppers are made with ground chicken, grated zucchini, green onions, fresh chopped cilantro and garlic. That's it. No cheese or bacon. The gluten-free mixture is rolled into balls and then pan-fried in a little olive oil until golden and crispy. Delicious! Plus you get the health benefits of zucchini and the health benefits of protein.
Serve these crispy chicken zucchini poppers plain or with your favorite healthy dipping sauce. You could serve these ground chicken poppers as a snack, appetizer or for lunch or dinner with a vegetable and salad. This skinny recipe could easily be doubled or tripled for get-togethers.

Ingredients
- 1 pound ground chicken
- 2 cups grated zucchini (do not peel zucchini)
- 2 - 3 green onions, sliced
- 3 - 4 tablespoons fresh minced cilantro (or parsley)
- 1 clove garlic, minced
Here's how to make it:
- Mix ground chicken and remaining ingredients in a large mixing bowl. Season with salt and pepper, to taste. (If you don't like cilantro, leave it out or use fresh parsley instead.)
- Grease a frying pan with a little olive oil. Spoon out eight to 10 nugget-sized pieces onto the oiled skillet. (I like to use a small ice-cream scoop to portion my poppers.)
- Cook over medium heat for 5 minutes on each side. Drain the poppers on paper towels to absorb any extra grease. Store any leftover poppers in an airtight container in the fridge.
