Want to change up taco night? My kids took me to a vegan restaurant that served the most amazing cauliflower tacos. After eating them, I was inspired to find a simple cauliflower taco recipe to make at home. This vegan and vegetarian taco recipe is beyond simple to make and is packed with Mexican seasonings (thank you taco seasoning mix).
The cauliflower is tossed in taco seasoning, olive oil and lime juice, then baked until tender and slightly crispy. The cauliflower is then loaded into warmed tortillas and drizzled with a creamy sauce. Some of my favorite Mexican sauces to use on these tacos are serrano avocado sauce, creamy taco sauce, amazon sauce or even Cajun dipping sauce.

Ingredients
- 1 head cauliflower, cut into small florets
- 2 tablespoons taco seasoning
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- flour tortillas or corn tortillas, warmed
- chopped fresh cilantro, for serving (optional)

- creamy taco sauce
- serrano avocado sauce
- guacamole
- Greek yogurt (stir some taco seasoning into it)
Recipe Notes
- If you have time, make your own homemade taco seasoning blend. It's easy! Store the spice blend in an airtight container to use in other recipes.
Here's how to make it:
- In a small bowl, stir together the taco seasoning, olive oil and lime juice.
- Put the cauliflower into a large bowl and toss with the taco seasoning mixture. Season with salt and pepper, if desired. Put the cauliflower on a baking sheet in a single layer.
- Bake in a preheated 400-degree F oven for about 30 minutes or until the cauliflower is tender and browned. Serve the cauliflower in warmed tortillas with chopped cilantro and desired sauce.
