Juicy Mexican Grilled Chicken Recipe for Dinner or Meal Prep (20 Minutes) by Donna John

Meal prepping is new to me. I got in a healthy frame of mind and ordered some meal prep containers recently. Now I'm looking for high-protein meal-prep recipes to cook and put into those containers. (Check out the health benefits of meal prepping and the health benefits of protein.)
Chicken breast is a popular ingredient for meal prepping. Being someone who wants flavor in their foods, I tried this easy grilled Mexican spiced chicken recipe. The chicken breast is simply sprinkled liberally with a seasoning blend of chili powder, garlic powder, onion powder, crushed red pepper flakes, oregano, paprika, cumin, salt and pepper, and then cooked in a grill pan. The flavorful chicken was a hit for dinner and will make it onto my meal prep recipe list.
Variation: Try this high-protein recipe with pork chops.
You can cook these chicken breasts on an outdoor grill, if preferred (and the weather is cooperating). Serve these juicy chicken breasts for dinner with your favorite side dishes, chop them up for chicken salad or pop one into a meal container for lunch or dinner the next day.

Ingredients
- 4 boneless chicken breasts
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon crushed red pepper flakes
- 1 1/2 teaspoons dried oregano
- 2 teaspoons paprika
- 1 1/2 teaspoons ground cumin
- 1 teaspoon salt
- 1/4 teaspoon black pepper
Here's how to make it:
- Combine all the seasonings in a bowl.
- Liberally season both sides of the chicken with the seasoning. Drizzle with a little olive oil, if desired.
- Cook the chicken in a grill pan until well browned on both sides and cooked through, about 8 to 10 minutes, depending on thickness. Internal temperature of chicken should be 165 degrees F internal temperature on a food thermometer. Serve or cover and refrigerate for meal-prepping or quick dinners later.
