Ingredients
- 10 1/2 tablespoons butter, softened
- 1 egg
- 1/2 cup powdered sugar, plus more for sprinkling
- 1 1/2 cups all-purpose flour
- 1 teaspoon ground cinnamon
- 1/2 lemon, juiced
- 1 tangerine, juiced and zested
- 2 1/4 cups shredded coconut
- 1 egg (for egg wash)
- 5 - 6 tangerines, sliced thin
Recipe Notes
- The amount of cookies depends on the size of the rounds you cut from the dough.
- Be sure to let the cookies cool completely before serving.
- Store the cookies in an airtight container.
Here's how to make it:
- Beat the butter, egg and sugar with an electric mixer until light and fluffy.
- Add the flour, cinnamon, lemon juice and tangerine juice and zest. Mix until incorporated. Stir in the coconut.
- Form the dough into a ball, flatten into a disc and refrigerate 30 minutes.
- Roll out the dough using a rolling pin. Use a round biscuit cutter or cookie cutter to cut into rounds bigger than the tangerine slices.
- Brush each dough circle with some egg wash and place a tangerine on top. Sprinkle with powdered sugar.
- Bake the cookies in a preheated 350-degree F oven for about 15 minutes. Remove and let them cool on the baking sheets a few minutes before removing to cool completely.
