Hash brown casseroles are a must year-round at my house. This hash brown casserole recipe is the easiest, cheesiest casserole ever. The copycat Cracker Barrel recipe is perfect as a dinner, breakfast or brunch side dish. Trust me when I say it’s a crowd and family pleaser. Everyone will love this high-protein potato casserole recipe, and they’ll have no idea how easy it was for you to make because of your slow cooker.
What makes this slow-cooker recipe so easy? It only has five ingredients and prep time takes only five minutes. To make this easy hash brown casserole recipe you will need a bag of frozen hash browns, a can of cream of chicken soup, sour cream, cheddar cheese and butter.
Besides adding shredded cheese near the end of the cooking time, this is a “set it and forget it” recipe. You just add all the ingredients to your slow cooker and that’s it. Now that is my kind of side dish recipe. Plus you get the health benefits of protein in every bite of this high-protein recipe.

Ingredients
- 22 ounces (1 bag) frozen hash browns
- 10.5 ounces (1 can) cream of chicken soup
- 8 ounces sour cream
- 2 cups shredded cheddar cheese (divided)
- 3 tablespoons unsalted butter
Here’s how to make it:
- Add all the ingredients except 1 cup of shredded cheddar to the slow cooker. Season with salt and pepper and mix well. Cook on low for 4 hours. (You can use any cheese you like for this recipe. Gruyere, Monterey Jack, Mexican blends, fontina or white cheddar are delicious.)
- After 4 hours, add the remaining shredded cheddar. Cover and cook for another 20 minutes on low. Serve. Add some color and freshness by garnishing with chopped green onions. Store the casserole in an airtight container in the fridge and reheat in the microwave.
