Pesto Pasta Recipe With Shrimp Doesn't Skimp On Flavor (4 Ingredients, 20 Minutes) by Donna John

Pesto pasta is one of my favorite dinner recipes to make. Usually the protein is chicken, but this time I decided to use shrimp. Using shrimp actually made this pesto pasta recipe even quicker to make. Plus, the recipe is high in protein and tastes amazing!

Here is your shopping list for this pasta and seafood dinner: fresh shrimp, olive oil, spaghetti noodles (or your favorite pasta), basil pesto and optional Parmesan cheese for serving. The recipe cooks up in about 15 minutes with minimal prep (especially if you buy the shrimp already cleaned). 

Because I make batches of pesto in the summer when my basil plants are thriving, I always have homemade pesto on hand. But a jar or container of refrigerated store-bought pesto works, too. 

Serve this easy Italian-inspired shrimp and pasta recipe for dinner with a salad and bread.

Ingredients

• 1/2 - 1 pound medium to large shrimp, cleaned and deveined 
• olive oil
• 12 ounces spaghetti noodles, cooked according to package directions for al dente
• 7 ounces (1 jar) pesto or 1 cup homemade basil pesto
• grated Parmesan cheese, for serving (optional)

Here's how to make it: 

1. Season the shrimp with salt and pepper.
   
2. Heat about 1 tablespoon of olive oil in a skillet. Add the shrimp and cook on one side until beginning to brown, about 2 to 3 minutes, depending on size of shrimp. Flip the shrimp over and cook until opaque and cooked through, about 2 minutes more.
   
3. Add the pesto and cooked pasta to the skillet. (Use homemade or store-bought basil pesto.) Toss to coat. Serve with Parmesan cheese, if desired. Store any leftovers in an airtight container and reheat quickly in the microwave.
