This easy Spanish pork recipe cooks that pork loin down in a flavorful, sassy sauce made with vegetables, tomatoes, chiles and spices. Ingredients
- 2 pounds boneless pork loin, fat removed and cubed
- 1 tablespoon butter
- 1 large onion, diced
- 1 chipotle in adobo sauce, seeded and chopped
- 1 cup bell pepper, diced (any color)
- 1 cup celery, diced
- 16 ounces (1 can) fire-roasted tomatoes
- 1 tablespoon minced garlic
- 1/2 teaspoon chili powder
- 3/4 cup water
- 2 tablespoons granulated sugar
- cornstarch (optional)
- cooked rice, for serving
Here's how to make it:
- Melt the butter in a large frying pan. Brown the pork. Push the pork to one side and add the onion and garlic. Cook until tender. Mix onion and pork together.
- Add the can of tomatoes, water, celery, bell pepper and chipotle. Season with salt and pepper, to taste. Stir, cover and simmer 45 minutes or until pork is tender.
- Stir in the sugar. If you want it thicker, add a cornstarch slurry (mix a little cornstarch with water). Serve over rice. Store any leftovers in an airtight container in the fridge. Reheat in the microwave.
