Savory Tourtière Recipe: A French Canadian Meat Pie Recipe for Meat & Potato Lovers

Tourtière is a French Canadian meat pie that originated in the province of Quebec. The savory meat pie is usually made with ground pork, ground beef or ground veal, mashed potatoes and spices. Sometimes wild game is used, such as pheasant, moose, elk or rabbit. This hearty meat pie is a traditional part of Christmas and New Year's Eve dinner in Quebec.

This easy tourtière recipe uses ground pork and ground beef, and is seasoned with spices like sage, thyme, allspice and cloves. If you find the filling is too loose, add a couple tablespoons on breadcrumbs to the filling before baking. Serve this meat pie with your favorite vegetable or salad.

Ingredients

  • 1 pound ground pork
  • 1/2 pound ground beef
  • 1 onion, finely diced
  • 3 cloves garlic, minced
  • 1 large russet potato, peeled and cut into pieces
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon pepper (or to taste)
  • 1/4 teaspoon ground sage
  • 1/4 teaspoon dried thyme
  • 1/2 teaspoon allspice
  • 1/8 teaspoon cloves
  • 1/2 cup beef broth
  • 1 9-inch double pie crust
  • egg wash (1 egg and 1 tablespoon water)

Here's how to make it: 

  1. Boil the potatoes in salted water until tender. Drain and mash.
  2. Cook the pork, beef, onion and garlic until meats are cooked through, breaking it up as you stir. Add the mashed potatoes, salt, pepper, sage, thyme, allspice, cloves and beef broth. Bring to a boil, reduce heat and simmer about 15 minutes or until thick. Cool the mixture about 20 minutes. 
  3. Line a pie plate with the bottom crust. Add the cooled filling and cover with the top pie crust. Seal the edges and cut some slits in the top. Brush the crust with the egg wash.
  4. Bake in a preheated 425-degree F oven for about 45 to 50 minutes or until golden. Let it sit about 10 minutes before serving.
